Breakfast is served as a buffet in the dining room overlooking the city at Rua Teras Restaurant on the hotel's top floor and is included in the room rate. The buffet also includes products from the Van region.

The lists below reproduce the wording of the TÜRKPATENT (Turkish Patent and Trademark Office) register; they are not a list of what is in our hotel's breakfast buffet.

The register defines Van Kahvaltısı as “a nationally renowned type of breakfast unique to the province of Van, consisting of a wide variety of local products”; Van İl Kültür ve Turizm Müdürlüğü (Van Provincial Directorate of Culture and Tourism) calls it “a gastronomic brand registered for its serving ritual and variety of products”. The registration covers how the table is laid, not a single dish.

Its origins are also recorded in the register: “it is based on tradespeople who went to morning prayers in the city and then opened their shops, having breakfast in the city instead of returning home.” The first breakfast shops opened in 1947 under the name “milk house”; over time, breakfast restaurants replaced the milk houses.

Van Kahvaltı Kültürü is also listed in Türkiye's Somut Olmayan Kültürel Miras Ulusal Envanteri (National Inventory of Intangible Cultural Heritage).

According to the register, the outdoor breakfast event held in Van in June 2014 entered Guinness Rekorlar Kitabı (Guinness Book of Records) as the world's largest gathering at a table, with 51,793 participants. The record belongs to the city.

INCLUDES ACCORDING TO THE REGISTER

  1. Van Otlu Peyniri

    Designation of origin no 405. The register requires six herbs: sirmo, mendo, heliz, wild mint, thyme, siyabo; herbs must not exceed two per cent of the cheese's weight. Matured underground.

  2. Murtuğa

    Geographical indication of source no 243. The register's one-line definition: “cooked from a mixture of flour, eggs, butter and salt.”

  3. Van Kavut

    Geographical indication of source no 390. A dish “made by roasting flour from milk-soaked, ground, unhulled wheat with butter”; the flour must be from Tir wheat.

  4. Clotted cream

    Milk is boiled, poured into large, shallow vessels called “lenger” and kept over low heat; the cream that forms on the surface is removed, in the register's words, “without breaking it up”.

  5. Butter

    Used in more than one place on the table: a required item; Murtuğa and Van Kavut are cooked by roasting in butter.

  6. Honey

    The register states a requirement and a preference. Required: “Honey must be locally produced.” Preferred: “Karakovan honey is preferably served as part of Van Kahvaltısı.”

  7. Rose jam

    Geographical indication of source no 505. Made from two kinds of rose: the jam rose gives its scent and taste; the repeat-flowering rose called “Kral Gülü” gives its characteristic colour.

  8. Cacık

    The main ingredient is çökelek, not yoghurt: made by boiling buttermilk and straining it in cloth bags. It is mixed with chopped dill, green pointed peppers and coriander.

  9. Egg dishes

    The register lists four types: “boiled or fried eggs, eggs with sucuk, eggs with kavurma, or menemen.” Sucuk must be beef and have a “mosaic appearance”.
